Dough Ingredients

  • 1 cup cottage cheese (low-fat or full-fat)
  • 3 tablespoons maple syrup (or honey/brown rice syrup)
  • 2 teaspoons vanilla extract
  • ½ cup vanilla protein powder (your choice of plant or whey)
  • 1 ½ cups almond flour (finely blanched)
  • 1 pinch salt
  • ½ cup mini chocolate chips

Preparation Instructions

  • Add cottage cheese, maple syrup, and vanilla extract to a blender. Blend until smooth and creamy.
  • Pour the blended mixture into a large bowl. Stir in the protein powder, almond flour, and salt until fully combined.
  • Fold in the mini chocolate chips.
  • Using your hands, roll the dough into bite-sized balls (about golf ball size). You should get 15–20 bites.
  • Keep in an airtight container in the fridge for up to 1 week, or freeze up to 3 months.

Notes

These bites are gluten-free and can be made with either low-fat or full-fat cottage cheese depending on your preference.
