Raspberry Chocolate Lasagna
A decadent Raspberry Chocolate Lasagna made with layers of chocolate cookies, cream cheese, raspberry jam, and fresh raspberries.

Ingredients
- 1 package chocolate sandwich cookies, crushed about 9 oz / 255 g
- ¼ cup butter, melted 60 g
- 1 package cream cheese, softened 8 oz / 225 g
- ¼ cup granulated sugar 50 g
- 1 teaspoon vanilla extract
- 1 tub whipped topping, thawed 8 oz / 226 g
- 1 cup raspberry jam
- 1 ½ cups fresh raspberries
- 1 cup semi-sweet chocolate chips, melted
Instructions
- In a medium bowl, combine crushed chocolate sandwich cookies and melted butter. Press the mixture firmly into the bottom of a 9×13-inch pan to form the crust.
- In a separate bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth.
- Gently fold in half of the whipped topping into the cream cheese mixture until fully combined.
- Spread the cream cheese layer evenly over the prepared crust.
- Warm the raspberry jam slightly (microwave for 15–20 seconds) and spread it over the cream cheese layer.
- Sprinkle fresh raspberries evenly over the jam layer.
- Drizzle the melted chocolate chips over the raspberry layer.
- Spread the remaining whipped topping over the top and garnish with extra raspberries and chocolate drizzle.
- Refrigerate for at least 3–4 hours, or until set.
- Slice into squares and serve chilled.
Notes
Best served chilled and can be decorated with extra raspberries on top.
