- 1 cup cottage cheese, blended smooth
- 1 cup all-purpose flour plus extra for dusting
- 3 teaspoon baking powder
- 0.5 teaspoon salt
- 1 tablespoon olive oil
- 60–80 g fresh spinach, finely chopped
- 0.5 cup shredded mozzarella cheese optional but delicious
- 1 large egg for egg wash
Preheat the oven to 375 °F (190 °C) and line a baking sheet with parchment paper.
In a mini food processor or blender, pulse cottage cheese until smooth.
In a large bowl, combine smooth cottage cheese, flour, baking powder, salt, olive oil, chopped spinach, and mozzarella cheese. Stir until a soft dough forms.
Shape the dough into a thick log and divide into 6 equal pieces.
Form each piece into a flatter circle and use your finger to poke a hole in the center, creating the flagel (flat bagel) shape.
Place the flagels on the prepared baking sheet and brush the tops with the lightly beaten egg.
Bake for about 22–25 minutes, or until golden brown on top.
Transfer to a wire rack and let cool slightly before serving warm.
