parchment paper
- 1 box strawberry cake mix 15 oz
- 2 large eggs at room temperature
- ¼ cup vegetable oil
- ½ cup powdered sugar for rolling
Preheat the oven to 375 °F (190 °C). Line two baking sheets with parchment paper or silicone mats.
In a large bowl, combine the strawberry cake mix, eggs, and vegetable oil. Stir until well blended and a soft dough forms.
Place the powdered sugar in a wide bowl. Using a cookie scoop or spoon, portion about a tablespoon of dough and roll it into a ball.
Roll each dough ball thoroughly in the powdered sugar to coat all sides.
Arrange the coated dough balls on the prepared baking sheets, spacing them about 2 inches apart so they can expand.
Bake for about 10–12 minutes, until the cookies are set and slightly cracked on top.
Allow the cookies to cool on the baking sheet before transferring them to a cooling rack.
