Ingredients
  

Chicken and Beans

  • 2 cups shredded cooked chicken rotisserie chicken makes this quick
  • 2 cups cottage cheese small-curd works best
  • 1 can (15 oz) white beans drained and rinsed (like cannellini or great northern)
  • ½ cup chicken broth
  • ¼ cup diced mild green chiles
  • 1 teaspoon ground cumin
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste

Cheese Topping

  • 1 cup shredded cheese Monterey Jack or Cheddar are great

Instructions
 

Preparation

  • Preheat Oven: Set your oven to 350 °F (175 °C) and lightly grease a 9×13‑inch baking dish.
  • Mix Ingredients: In a large bowl, combine the shredded chicken, cottage cheese, drained white beans, chicken broth, diced green chiles, ground cumin, garlic powder, salt, and pepper. Stir until everything is evenly mixed.
  • Transfer to Dish: Spread the mixture evenly in the prepared baking dish.
  • Add Cheese: Sprinkle the shredded cheese evenly over the top of the casserole.
  • Bake: Bake for 25–30 minutes, or until the dish is hot, bubbly, and the cheese on top is melted and lightly golden.
  • Rest & Serve: Let it cool for a few minutes before serving so it sets up nicely.

Notes

This casserole is great for leftovers and can be easily reheated in the oven or microwave.
