- 2 cups shredded chicken rotisserie chicken works great
- 1 cup cottage cheese
- 1 can white beans 15 oz / ~425 g, drained and rinsed
- ½ cup chicken broth
- ¼ cup mild green chiles
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- Salt to taste
- black pepper to taste
- ½ cup shredded mozzarella cheese

Preparation
Preheat the oven to 375 °F (190 °C).
In a large bowl, combine shredded chicken, cottage cheese, white beans, chicken broth, green chiles, cumin, garlic powder, salt, and pepper. Stir until well mixed and creamy.
Spread the mixture evenly in a lightly greased baking dish.
Sprinkle mozzarella evenly over the top.
Bake for 20–25 minutes, or until the cheese is melted and lightly browned and the chili base is bubbling.
Let it sit about 5 minutes before serving so it thickens slightly.
