Main Ingredients

  • 2 cups shredded chicken rotisserie chicken works great
  • 1 cup cottage cheese
  • 1 can white beans 15 oz / ~425 g, drained and rinsed
  • ½ cup chicken broth
  • ¼ cup mild green chiles
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • Salt to taste
  • black pepper to taste
  • ½ cup shredded mozzarella cheese

  • Diced onion
  • corn
  • jalapeño
  • spinach
  • kale

Instructions
 

Preparation

  • Preheat the oven to 375 °F (190 °C).
  • In a large bowl, combine shredded chicken, cottage cheese, white beans, chicken broth, green chiles, cumin, garlic powder, salt, and pepper. Stir until well mixed and creamy.
  • Spread the mixture evenly in a lightly greased baking dish.
  • Sprinkle mozzarella evenly over the top.
  • Bake for 20–25 minutes, or until the cheese is melted and lightly browned and the chili base is bubbling.
  • Let it sit about 5 minutes before serving so it thickens slightly.
